I have found that chicken grilled to perfection in a simple Italian vinigrette is one of the most delicious and most versatile foods. When it is first grilled, you can, of course, eat it right off the grill while it is still hot and enjoy the delicious flavors of the marinade. When it is left over, however, there is so much that you can do with it. Sometimes I will have it cold and dip it in hummus or put it on a sandwich with hummus and cooked carrots. Other times, I will put a slice of mozzarella and a roasted red pepper and put it in the toaster oven just long enough to let the cheese begin to get a little soft. Anyway you have it, it is really very good.
